Oh my! It's been quit some time since I've posted last. I'm so, so sorry for the delay folks! It's just been crazy busy around here trying to help out family friends with a move to California. Yikes, talk about packing frenzy. However, I am back and I have food to share with you! Who doesn't love some tasty food? Better yet, who doesn't love tasty HEALTHY food?
Ladies and Gents, I present you my FISH STIR-FRY. Mmm Mmm Yummy!
In this stir-fry there are loads of nutritious ingredients that do wonders for your body as well as your taste buds. Fish is an amazing low-fat/high-protein source of omega-3 fatty acids, vitamin D and B12. Omega-3 fatty acids are marvelous for your hair, skin, nails, eyes, and cushioning your joints. However, the benefits don't stop there. The Vitamin B12 in fish is a mood and energy booster! How could you not love this recipe already? It's making me so happy and I'm just writing about it!
I sure hope you all are garlic lovers like myself, because not only do I have garlic paste in here, but I also have chili garlic sauce to kick it up another notch. Garlic has been shown to help benefit the cardiovascular system and keep your heart pumping along with lower cholesterol. Recent research is also showing that garlic might even be a big factor to preventing cancer. So don't shy away from garlic because of some smelly breath, because it does magical things for your body! Just remember to avoid garlic before a hot date and rinse with some strong mouth wash afterwards, and you'll be golden. And let's not forget the chili garlic sauce. The first half of that sauce (chili) is a mega metabolism booster. Hopefully by now you're super pumped to eat some garlic with these heart-healthy, fat-fighting seasonings!
Lastly, lets not forget the benefits of getting your veggies into your diet! Veggies are low in calories, high in fiber, and filled with plenty of necessary vitamins. I'm sure by now you've heard how great carrots are for your eyesight, so make sure to eat up and keep your eyes strong. In this recipe I've made sure to include a mixture of vegetables including onions (yes, those are veggies) and a nice asian veggie called Bok Choy. Bok Choy is such a delicious, delicate addition to this recipe because it provides a fresh, new flavor to the dish since not many of us eat it regularly. Aside from tasting delicious, bok choy is filled with antioxidants, vitamin C, Folic Acid, and Potassium. This little sucker will provide you all that with a low-carloric count! Yipeeeeee, you can eat it up and not feel guilty!
Now the moment you have been waiting for...time to make delicious stir-fry, grab your chopsticks (or fork) and dig in!
P.S., I'm going to apologize now for the lack of pictures below. Sorry folks!! I was really hungry when I was making this, and once all those mouth watering aromas hit my nose, I completely forgot to take pictures of the cooking process. I'll try and make sure to cook when I'm not absolutely famished so that you all have some pictures to look at!!
Klaudia's Fish Stir-Fry
Serves: 2
Ingredients:
-1 1/3 cup frozen vegetables (preferably stir-fry mixture)
-1 medium bok choy
-1/2 cup sliced button mushrooms
-1/2 cup chopped onion
-2 filets white fish (Cod, Grouper, Tilapia, etc)
-Juice of 1/2 lemon
-1/4 soy sauce
-2 heaping tsp of garlic paste
-1.5 tsp ginger paste
-2 tsp of chili garlic sauce
-1/2 tsp sugar
-1 tbsp oil of your preference or cooking oil spray (PAM)
-2 tbsp unsalted cashews or peanuts
Directions:
1) If your fish is frozen make sure to get it defrosted before starting the rest of this dish. Also, get your frozen vegetables out and thawing.
2) Prepare the marinade for your fish. In a bowl combine the lemon juice, soy sauce, ginger paste, garlic paste and chili garlic paste. Taste your marinade and see if you like it. If you would like more garlic, ginger or chili feel free to add more to your liking. If you would like more spice but not as much garlic, feel free to add some red pepper flakes to get your heat minus the garlic.
3) Cut fish into bite sized pieces, and mix with marinade. Place into fridge to marinate while finishing your prep.
4) Chop the bottom of the bok choy off to separate leaves. Wash and chop the stem into bite size bites. Once you get to the leaves, split each leaf in half down the middle and continue to chop into small pieces.
5) Wash the mushroom and slice them. Also, chop the onion.
6) In a hot wok or large saute pan, add the oil or spray with the cooking oil spray. Make sure to heat the oil to a med/high temperature, closer to the high end. Add your thawed mixed veggies, saute for 1 minute, until the colors are vibrant and veggies are still stiff.
7) Add onion, stir/cook for about 15 seconds, and add bok choy. Cook for 1-2 minutes so that bok choy is bright green.
8) Toss fish along with all of the marinade into your pan. Stir around for about 3 minutes, or until fish is almost completely cooked through.
9) Add mushrooms and cook until mushrooms brown up and fish is cooked through. Should only take about 2 minutes. Top off with crushed cashews or peanuts, and give one last toss.
Plate up and enjoy, or as we say in Poland...Smacznego!
